"Random tips:"
When you are planning your big day, keep the time that you will be photographed a priority in the schedule. The best images BY FAR in my collection are those when I can get the bride and groom outdoors by themselves at 'the golden hour'.
For most weddings, this is the time of day after the ceremony and before (or during the first part) of the reception. This is usually a rushed time, as your guests are waiting, but consider planning at least 20 minutes on-location with your photographer. You'll be glad you did! Getting most of the traditional photos done before the ceremony always helps.

Another tip about scheduling outdoor weddings: think about the harsh sunlight (and heat) of the midday. Consider scheduling your ceremony and photos later in the afternoon or early evening.
And if you get a cloudy day, don't worry! You might miss the blue skies, but you will be cooler and the light will be perfect for photos :)
"Does the photographer you're interviewing...."
...show you an entire, recent, set of wedding images? I notice so many photogs sites have client galleries -- and all of them are password protected. Most of my clients don't care if they are password protected or not (I give the option), so I wonder: if it's not about privacy, are these photogs trying to hide their wedding images from potential clients??
Ask the photographer that you're considering if they will show you 1 or 2 or more full sets of wedding images. Here is a full gallery of one of my recent weddings:
